Outdoor Cooking. The grill. The smoker. A big barbecue. The tailgate party. Any way you spell it, there's no better way to get people together outside on a beautiful day, enjoying life, food and friendship. I'm a fan of them all. On Wednesday night, steak night for our family, I make sure we have the best rib-eyes, strips or filets I can find and top'em off with onions, mushrooms and Boursin Cheese. Match it up with a lemon pepper asparagus for lighter nights or Cajun Grilled Potatoes for meals with more ZING and it doesn't even feel like a weekday night. It's wonderful.

Friday night is neighborhood get together night, and believe me, friends don't go hungry on my watch. Because Friday night usually starts late and ends early, the usually call is for informal, casual foods, some vegetarian plates, and other light foods. After all Friday night is for winding down and chilling out and sipping down a few cocktails after the week-long ups and downs.

Now THAT'S a FIRE!!!

Of course Saturdays call for something completely different. Round about 2 or 2:30 in the afternoon, the kids bellies start calling their names. While burgers and dogs will usually satisfy, I like to surprise the kids with new and different ways to fill them up.

Hey! I run Grillin-n-Chillin! It's what I do!

Then of course, there are Sundays. Ahhh Sundays. Sundays get planned for in advance. Sunday is cook-out day. Not only at my place but nationwide. After all if something needs to be marinated for 24 hours, you need to make sure that starts on Saturday! And you need to have a pretty good estimate on the number of guests. Around our house, Sundays afternoons will typically bring about six adults, four teens and four to six youngsters to the backyard at one time or another. Gotta make sure nobody's whining about being hungry!

Did I forget to mention football season? Did I forget to mention Tailgates? Tailgate parties are the King of Sundays! It's a pull out the stops, barbecue competition in our parking lot. Nothing is too easy or too extravagant for a Tailgate Party. Never cooked Buffalo Steaks? We do when the Bills are in town. And we have 'em shipped in dry ice all the way from Jackson Hole, Wyoming. Why? Where else would you want to buy quality Buffalo from? Maine Lobster in Miami? It's a Tailgate Party staple when New England's in town. Makes all those Bostonians wish they were back North where they shoulda stayed.
