Garlic Lobster Tails
4   fresh or frozen Lobster tails (about a pound)  
1/4 cup   olive oil  
6-8   garlic cloves, minced  
3 tsp   Cajun seasoning  
 
Remove the tail meat from the shell. Cut into large bite sized pieces (about 1 by 1½ inches). Place tail meat pieces into a quart sized zip-loc bag. Add the olive oil, garlic and seasoning, mix well, and refrigerate for an hour or more.
(Note: That's the prep work. For tailgate parties, I make this on Saturday night to bring to the game Sunday morning.)
To cook, get your barbecue to a medium heat over a single level fire. Pour mixture from the bag into an aluminum pie tin set on the cooking grill. Stir and turn constantly to ensure even cooking and basting in the cajun oil. This usually takes about 5-10 minutes depending on the heat of the fire.
Remove from heat and place the meat on a serving dish. Serve with fancy toothpicks or cocktail forks.
