Crabmeat Appetizer - Basil and Crab Topped Cucumbers
This delicious crabmeat appetizer is so simple, yet so far away from the everyday dish. You can use a 6-ounce can of crabmeat, drained, instead of frozen. I personally love Phillips Crabmeat, typically found in the seafood section of better grocery stores. The ingredients for this crabmeat appetizer will run you roughly 12 bucks.
TO PREPARE: 1 medium English cucumber 4 ounces cream cheese softened 2 tablespoons mayonnaise or salad dressing ¼ cup chopped fresh basil 2 tablespoons finely chopped red onion 2 teaspoons fresh grated lemon peel 1 cup frozen cooked crabmeat thawed and flaked 1 sprinkle paprika
Score cucumber lengthwise with tines of a fork (for decoration). Cut into ¼-inch slices.
Beat the cream cheese in a small bowl with an electric mixer on low speed until creamy. Mix in mayonnaise until well blended. Stir in chopped basil, onion and lemon peel.
Fold in crabmeat.
Spread or pipe about 1 teaspoon crabmeat mixture on each cucumber slice. Sprinkle with paprika. Garnish with basil leaves and long strips of lemon peel, if desired. Makes about 24 appetizers. | |  CLICK TO ENLARGE |
